This eggplant recipe is a great vegetarian \/ vegan option to serve as side dish with dal, curries or can be eaten as it is with some hot chapatis or parathas.<\/p>\n<p>The vegetable \u201cBaingan\u201d (as called in Hindi) is known by many other names like Brinjal, Aubergine or Eggplant. You can even try roasting them in oven or air fryers.<\/p>\n<p>Eggplants comes in variety of shapes (round, elongated, oval etc) and sizes. &nbsp;The colour of the vegetable varies from white, green to dark purple with fleshy insides. However you can cook it in sesame oil, olive oil or any oil of your choice.<\/p>\n<p>2. For spiciness, fresh green chillies and red chilli powder are used. You can even use some crushed black pepper &amp; adjust the spiciness as per your taste.<\/p>\n<h3 style=\"text-align: left;\">Steps To Prepare:<\/h3>\n<p><b><u>Step 1:<\/u><\/b><br \/>\nWash the brinjal under running water. Wipe it with a kitchen towel. Slit it into 4 pieces. Add ginger, garlic paste and chopped green chillies.
