How to make Gajar Ka Halwa (Carrot Pudding)

Today I am going to share the recipe of one of the most liked desserts of all time “Gajar Ka Halwa” or “Carrot Pudding”. It is a delicious blend of carrots, ‘khoya’, sugar, ghee and dry fruits. Although you can make and have this dessert all the year round, it’s much more delicious and irresistible in winters. It is such a treat for eyes seeing those heaps of grated carrots completely immersed in milk being cooked on low flame for hours and hours and the warm-sweet aroma of it filling the house is completely heavenly.

 List of Ingredients

1 Grated Carrots 1/2 Kg
2 Milk 1 litres
3 Sugar 1 & 1/4 cup
4 Ghee 4 tbsp
5 Chopped Almonds/Cashews 1/4 cup

Steps to Prepare:-

Step 1:- Add all the grated carrots and milk in a heavy bottomed pan. Cook it on slow flame with intermittent stirring. This process may take approx. 2 hours. However, if you want to speed up the process, you may cook it on medium flame also but you have to be careful about stirring as it can quickly get burnt from the bottom and sides

Step 2:- Once the milk is completely absorbed by the carrots, the carrots will soften up and become mushy. Add all the sugar to it and mix well. Keep stirring the halwa till all the sugar is completely dissolved.

Step 3:- Add ghee and chopped dry fruits to the halwa. Stir continuously for 4-5 minutes till a glaze comes on the surface.
