Kuttu Ke Pakore (Buckwheat Potato Fritters)

Good morning everyone!! Today I am going to share the recipe for “Kuttu Ke Pakore”. This snack is consumed mostly in Navratras fast. “Kuttu” is also known by other names like buckwheat or grass-seed. For this recipe, Kuttu flour is combined with chopped boiled potatoes and green chillies along with some spices; deep fried to give yummy crunchy pakoras. It is advised by elders in the family that “Kuttu” should be consumed with curd or buttermilk as Kuttu has warm effect on the body and its combination with curd balances out that nature.

List of Ingredients: (Serves 3-4 persons)

  • Kuttu Flour- 2 cups
  • Water- 1&1/2 cups (approx)
  • Medium sized boiled Potatoes- 4
  • Chopped Green chillies-2
  • Sendha namak (or common salt)-1 tsp ( to taste)
  • Red Chilli Powder-2 tsp
  • Oil- For Frying

Steps to prepare:

Step1:
Take Kuttu flour in a mixing bowl. Add chopped green chillies, salt and red chilli powder to it. Gradually add water to it to form a thick batter. The quantity of water may vary depending on the quality and coarseness of the flour.

Step2:
Chop the boiled potatoes to get small pieces. Add these pieces to the batter above. Mix gently so that all potatoes pieces are coated by this batter.

Step3:
Heat oil in a frying pan. Once the oil is heated, gently drop the potatoes covered in the batter using hand or spoon and knife.

Please make sure the flame is Medium-High. If the flame is low, the oil will cool down and as a result the pakoras may not be crunchy or get oil-soaked. Fry the pakoras from both sides till they are golden brown from both sides.
